Our dedication to excellence begins in the groves. Each year, we carefully watch over our olives, harvesting them only at the precise moment of ripeness that yields the very best. This delicate balance preserves the natural integrity of the fruit, yielding oils of exceptional flavor and nutritional value.
Once gathered, the olives are then processed using cutting-edge extraction technology — a sophisticated, environmentally friendly, and purely mechanical process. This method allows us to maintain the purity of the oil, keeping it in a higher category, from olive to bottle. Each step of our process honors the individual terroir of Baixo Alentejo — the river-fed soils, the dry heat of the summers, and the indigenous Portuguese varieties Galega, Cobrançosa, and Cordovil. Each of these factors comes together to create an olive oil with a unique personality and sense of identity.
